The "Alcapurria" is a kind of typical food of Puerto Rico made from a dough made of grated green plantain and taro stuffed with ground beef (picadillo), crabs or fish, fried in enough vegetable oil to cover the heel. Many Puerto Ricans enjoy this fried and are often seen eating them on the beach with friends and family. The alcapurrias are among many fritters served at "kiosks" (type of fast food establishment).

Recipe

5 green bananas, peeled and chopped let them stand in a container with water and salt;
1 lb. of taro (taro), peeled and chopped
2-4 tbsp. of olive oil achiote
1 tbsp. salt
FOR FILLING
1 / 2 lbs. of ground turkey or beef
1 / 2 oz. little chopped Bacon (optional)
1 oz. Cooking Ham minced
1 / 2 chopped tomato
2 minced fresh chili
1 small onion, chopped
1 / 2 tsp. salt
1 / 4 tsp. vinegar
7 stuffed olives
1 / 2 cup raisins
1 / 2 tbsp. capers
1cda. olive oil
oil for frying
1 tsp. vinegar

Procedure

PROCEDURE FOR THE DOUGH 1
Drain the bananas and rinse well. Mash the bananas and taro in the food processor until the dough is smooth. If you have no processor can do it manually with a grater. Add remaining ingredients and reserve the mixture until it is ready for filling.
PROCEDURE 2
Saute in olive oil bacon for a few minutes. Then add the ham, garlic, chili, tomatoes and onion until tender. Add beef and cook until ready. Add raisins, and olives alcaparritas. Mix well and remove from heat.
Fill in the fritters, form pellets or sorullitos Introduces the dough and meat, knead for not filling out and fry in hot oil and fine but not abundant for desborronen.
